1 pound chicken, cubed
2 Cups chicken broth
1 can corn, undrained
1 can black beans, undrained
2 large cans green enchilada sauce
1/2 chopped onion
1 clove garlic, pressed
Brown the chicken, then add it to all of the other ingredients and 
simmer for about 20 minutes.  Serve with tortilla chips, sour cream and 
cheese. Double or triple the recipe as needed, or just add more beans 
and corn!
